Veggie Filled Turkey Burgers

Ingredients
  

  • 2 lb Lean Ground Turkey
  • 2 Poblano Peppers Diced
  • 1 White Onion Diced
  • 1 Red Bell Pepper Diced
  • 1 Green or Yellow Bell Pepper Diced
  • Salt and Pepper to taste
  • Roasted garlic cloves (optional)
  • 1/4 cup Parsley Chopped (optional)
  • 1 Egg
  • Butter Head Lettuce or Iceburg Lettuce for serving
  • Tomato for Serving
Greek Yogurt Based Spicy Mayo
  • 1/2 cup Unsweetened 2% Greek Yogurt
  • 1 tbsp Sriracha Sauce (adjust to heat preference)
  • 1 tbsp Sugar Free Ketchup I use primal kitchen
  • 1/2 tsp Garlic Powder optional for extra flavor
  • 1 tsp Salt (adjust to preferences)

Method
 

  1. Turn oven to 400 degrees. While the oven is heating, cut the head off of a garlic clove, wrap it in foil or place it on a oven safe with olive oil. Once oven is heated place garlic in the oven and roast for 40 minutes or until garlic is golden and soft. (optional step if using garlic)
  2. While garlic is roasting, heat an oven safe skillet to medium heat. Once heated add 1 tbsp of olive oil and saute diced peppers and onions until translucent and cooked through, turning occasionally (about 8 minutes).
  3. Place 2lbs of turkey into a bowl, adding salt and pepper to taste. Add onion and pepper mixture, roasted garlic, and chopped parsley and 1 egg. Use your hands to mix all together. Turn oven to 375 degrees
  4. Form about 10 burger patties with the mixture. If time allows, place them in fridge for about 30 minutes to firm them up - if time does not allow skip this step they will still turn out great!
  5. Reheat your skillet to medium heat with 1 tbsp of olive oil. Cook the turkey burgers over medium heat until golden brown. (About 4 minutes on each side) than place the entire skillet in the oven and roast for 8-12 minutes or until cooked through.
  6. Remove Burgers from oven and serve over a bed of butter or ice burg lettuce, and your favorite burger topings
Greek Yogurt Based Spicy Mayo
  1. Combine all ingredients in a bowl. Adjust salt and sriracha to preference.
  2. Place mayo on top of cooked burger, add any other desired ingredients and Enjoy!!!
